Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots (about 3-4 medium carrots)
- 1/2 cup chopped walnuts or pecans (optional)
For the Crowdie Cheese Frosting:
- 8 ounces crowdie cheese, softened
- 1/2 cup unsalted butter, softened
- 3-4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- Prepare the Cake Batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
- In another bowl, beat together the granulated sugar and vegetable oil until smooth. Add the eggs, one at a time, beating well after each addition.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated carrots and chopped nuts, if using, until evenly distributed.
- Bake the Cake: Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Make the Crowdie Cheese Frosting: In a mixing bowl, beat together the softened crowdie cheese and butter until creamy and smooth. Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition. Add the vanilla extract and beat until the frosting is smooth and spreadable.
- Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate or cake stand. Spread a layer of crowdie cheese frosting evenly over the top. Place the second cake layer on top and frost the top and sides with the remaining frosting.
