Rhubarb Coffee Cake

Ingredients

  • 1 cups packed brown sugar
  • 1/2 cup shortening
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup (8 oz.) sour cream
  • 1/2 cups chopped rhubarb
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup chopped pecans or walnuts
  • 1 tbsp. butter or margarine
  • 1 tsp. ground cinnamon

In a mixing bowl, cream sugar with shortening. Add egg. Combine flour, baking soda, and salt; add alternatively with the sour cream to the creamed mixture. Fold in rhubarb. Spread in a greased 13 x 9 x 2 baking pan. Combine all topping ingredients; sprinkle over batter. Bake at 350 degrees for 45-50 minutes. Cool on wire rack.
