Chakra Salad

Ingredients

  • 1/2 red pepper - diced
  • 2 large carrots - grated
  • 1/2 yellow pepper - diced
  • 4 scallions - mostly green parts, chopped
  • 1/2 cup blueberries
  • 4 cups purple cabbage - shredded
  • Organic unsweetened coconut flakes
  • Raw sunflower seeds
  • Organic diced avocado

 

  • 1/4 cup organic natural peanut butter
  • 1/4 cup coconut (or tap) water
  • 1/2 cup rice vinegar
  • 3 tbsp organic raw honey (raw if available)
  • 1 tsp sea salt
  • 1 tbsp or organic non-GMO Soy Sauce or Tamari
  • 1 tbsp organic sesame oil (raw if available)

To Prepare:

 

1. Chop the red and yellow pepper, scallions. Grate the carrots and shred the purple cabbage.

2. Mix together with the blueberries and add the dressing to taste.

Dressing

1. Whisk together: peanut butter, coconut water, rice vinegar.

2. Add the honey, sea salt, soy sauce or tamari and sesame oil.  

 

Mix dressing and vegetables together.

Top with unsweetened coconut flakes, raw sunflower seeds and diced avocado. 

Served chilled.
