YU Ranch Hungarian Beef Bogracs
Ingredients:
- 3lbs YU Ranch stew or sirloin beef cubed
- 1/2 lb bacon, cut into small pieces
- 2 medium onions chopped finely
- 2 tbsp cooking oil.
- 2 tbsp sweet paprika
- 1 1/2 tbsp hot paprika
- Dash of cayenne pepper
- 2 cups beef broth
- 2 cups water
- 2 medium potatoes cubed
- 2 medium carrots cut into bite-sized pieces
- 2 sweet peppers cut into bite-sized pieces
- 2 stalks celery cut into bite-sized pieces
- Heat oil then add onion and peppers with bacon. Cook 8 to 10 minutes or until onions are translucent.
- Add garlic and meat together. Brown for 10 to 15 minutes.
- Remove from heat and add paprika, salt and pepper.
- Cover with beef broth and water.
- Simmer for up to 2 hours. Add vegetables, simmering for another 1/2 hour.
- 45 mins before serving add potatoes and season to taste..
